I think that the 'Birth by Sleep' they talk about is cloning. In the far future, for some reason or anouther Riku, Kairi and Sora are cloned, and put into this kind of simulation to return their most basic memories. (KH & KH2) Unfortuanatly for them, Sora and friends didn't like to discover that they were fake, mere shadow's. (Kind of like what fake Riku did on KH: CM) They destroy the lab or somesuch and then eventually make the video where they vow to destroy this world, or somesuch.
This is my speculation, but it is supported by the intro to KH "Is this real or not?"
